Zucchini and Ham Pie [RECIPE]

Every summer, zucchini always seems to grow plentifully. This is a fabulous way to transform that squash into a quick, easy, and delicious dish your family will love. Just serve with a tossed green salad for a complete meal or serve it as a yummy side that goes perfect with your favorite fish or grilled meats.
INGREDIENTS
- 1 cup baking mix
- 4 large eggs, whisked
- 1/2 cup vegetable oil
- 3 cups zucchini, peeled and diced (about 2 to 3 zucchinis depending on size)
- 1 cup diced ham
- 1 diced onion
- 1/2 cup grated Parmesan cheese
- 1/2 cup shredded mozzarella cheese
- 1 teaspoon parsley flakes
- Kosher salt, to taste
- Fresh ground pepper, to taste
DIRECTIONS
- Preheat oven to 350 degrees F.
- Coat the inside of an 8- x 8-inch square baking dish or 12-inch deep-dish pie plate with cooking spray.
- Place all ingredients in large bowl and stir thoroughly to combine.
- Transfer to baking dish or pie plate and bake for 25-35 minutes, or until golden.
TIP: Can be made a day ahead and reheated before serving.
TIP 2: If you don’t want to include the ham, it may be left out and served just as a veggie side dish.
YIELD: 6 servings
