Zucchini and Ham Pie

Every summer, zucchini always seems to grow plentifully. This is a fabulous way to transform that squash into a quick, easy, and delicious dish your family will love. Just serve with a tossed green salad for a complete meal or serve it as a yummy side that goes perfect with your favorite fish or grilled meats.

INGREDIENTS

  • 1 cup baking mix
  • 4 large eggs, whisked
  • 1/2 cup vegetable oil
  • 3 cups zucchini, peeled and diced (about 2 to 3 zucchinis depending on size)
  • 1 cup diced ham
  • 1 diced onion
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese
  • 1 teaspoon parsley flakes
  • Kosher salt, to taste
  • Fresh ground pepper, to taste

DIRECTIONS

  1. Preheat oven to 350 degrees F.
  2. Coat the inside of an 8- x 8-inch square baking dish or 12-inch deep-dish pie plate with cooking spray.
  3. Place all ingredients in large bowl and stir thoroughly to combine.
  4. Transfer to baking dish or pie plate and bake for 25-35 minutes, or until golden.

TIP: Can be made a day ahead and reheated before serving.
TIP 2: If you don’t want to include the ham, it may be left out and served just as a veggie side dish.

YIELD: 6 servings
