We love Mediterranean food and Greek salad is one of our favorite dishes. It is just so colorful, delicious and flavorful, it makes eating a plate full of healthy goodness easy to do, even for those who normally don’t like to eat vegetables. Many Greek salads are made with lettuce, but by replacing the leafy greens with more substantial peppers, this dish has a longer shelf life and lasts for several days in the fridge, making it a great choice to pack in lunches for work, school, or even a family picnic.
