Chipotle Shrimp Tacos [RECIPE]

Delicious and simple to prepare, your family is going to love our chipotle shrimp tacos.

We are always on the lookout for a yummy recipe we can feed our friends who are pescetarians, and this one for chipotle shrimp tacos foots the bill. It is filling, flavorful and delicious, and has just enough smoky seasoning that it won’t set timid eaters’ mouths aflame. Also, it is the perfect weeknight meal because the entire recipe cooks up in about 15 minutes!
PREP: 5 minutes
COOK: 10 minutes
INGREDIENTS
- 2 teaspoons chili powder
- 1 teaspoon granulated sugar
- 1/2 teaspoon kosher salt
- 1/2 teaspoon ground cumin
- 1/4 teaspoon ground chipotle chile powder
- 32 peeled and deveined large shrimp (about 1 1/2 pounds)
- 1 teaspoon extra-virgin olive oil
- 8 (6-inch) flour tortillas
- 2 cups shredded romaine lettuce
- 1 ripe avocado, peeled and cut into 16 slices
- 3/4 cup salsa verde
- 2 Roma tomatoes, diced
- 1 cup cheddar cheese, shredded
- Sour cream, for garnish (optional)
DIRECTIONS
- Heat tortillas one by one in a warm cast iron skillet until heated. Wrap them in a clean kitchen towel to keep warm and set aside.
- Stir together first 5 ingredients in a large bowl; add shrimp, tossing to coat.
- Heat oil in a large nonstick skillet over medium-high heat. Add shrimp mixture to pan; cook 1 1/2 minutes on each side or until done. Remove from heat.
- Place 2 tortillas on each of 4 plates; arrange 4 shrimp on each tortilla. Top each with 1/4 cup lettuce, 2 avocado slices, salsa, tomatoes, cheese, and sour cream, if desired.
YIELDS: 4 servings (2 filled tacos each)
