Garlic Roasted Potatoes [RECIPE]

Potatoes. There’s countless ways to make them, but one of my favorite ways has to be to roast these bad boys. It’s a quick and easy recipe, and best of all they cook in the oven while you work on getting the main dish ready on the stove top. Talk about multitasking!
First of all, wash and quarter 3 pounds of small red or white potatoes. Don’t worry about peeling them! That’s one of the reasons I love this recipe. Plus you’re going to love how yummy those skins are when they cook up. So delish. 🙂 Place the potatoes in a large bowl.
Next, peel and mince up about 3 tablespoons of garlic and sprinkle them over the potatoes.
Drizzle the potatoes and garlic with about a 1/4 cup of extra-virgin olive oil. You can eyeball it. Just make sure there’s enough oil to coat the potatoes. It helps them crisp up later in the oven.
Sprinkle 1 1/2 teaspoons kosher salt over the potatoes. After all, what are potatoes without salt?
Remember to add about 1 teaspoon of freshly ground pepper to the mix too.
Finally, add the Italian seasoning and ground red pepper flakes…
…and give everything a good stir until all the potatoes are coated in oil and covered with all those mouth-watering seasonings!
Pour the potatoes out onto a foil lined rimmed baking sheet and roast in a preheated 400° F oven. You’ll want to give them a toss with a spatula every 20 minutes or so, but let the potatoes cook until they are brown and crispy. It will take about 45 minutes to an hour for that to happen.
Take the potatoes out of the oven and serve them up while they’re hot. Just be sure you grab some for yourself first. I guarantee, these are going to go fast. Enjoy!

Garlic Roasted Potatoes
PREP: 10 minutes
COOK: 1 hour
INGREDIENTS
- 3 pounds small red or white potatoes
- 3 tablespoons minced garlic
- 1/4 cup extra-virgin olive oil
- 1 1/2 teaspoons kosher salt
- 1 teaspoon freshly ground black pepper
- 1 teaspoon Italian seasoning
- 1/4 teaspoon crushed red pepper flakes
DIRECTIONS
- Preheat oven to 400° F. Line a rimmed baking sheet with foil.
- Cut potatoes into quarters and place in a bowl with garlic. Drizzle with olive oil. Add salt, pepper, Italian seasoning and crushed red pepper flakes; stir to coat. Transfer potato mixture to baking sheet and bake for 45 minutes to an hour, or until brown and crispy. Stir every 20 minutes for even browning.
- Remove potatoes from oven and serve hot.
YIELD: 8 servings
