We love Mediterranean food and Greek salad is one of our favorite dishes. It is just so colorful, delicious and flavorful, it makes eating a plate full of healthy goodness easy to do, even for those who normally don’t like to eat vegetables. Many Greek salads are made with lettuce, but by replacing the leafy greens with more substantial peppers, this dish has a longer shelf life and lasts for several days in the fridge, making it a great choice to pack in lunches for work, school, or even a family picnic. We hope you try this dish enjoy it just as much as we do!

Why purchase ready-made pickles at the grocer when they are so easy to make yourself? These are crisp, delicious and packed with flavor. If you’re craving a tart dill pickle, pass on this recipe, as these come out more closely resembling a sweeter (but spicier) bread and butter pickle. Israeli Salad

Israeli Salad

Traditional Israeli Salad is a family staple in the Middle East. Prepared with fresh vegetables and herbs, it is a light and refreshing meal on a hot summer day.

Friends from countries around the globe have taught us that everybody eats salad, but every region has its own special variety based on what produce is grown there. Our friend Amit grew up in Israel and this is a traditional recipe that she remembers her mother making frequently for her family. Great on its own, it is especially delish when paired with Hummus!


15 minutes

  • 3 medium or 6 small Israeli cucumbers, diced
  • 4 Roma tomatoes, diced
  • 1 cup flat leaf parsley, chopped
  • 1/2 cup fresh peppermint leaves, chopped
  • 1/2 cup extra-virgin olive oil
  • 2 tablespoons fresh lemon juice
  • 4 ounces Feta cheese, crumbled
  • Kosher salt and freshly ground black pepper
  1. Combine all ingredients together in a large bowl and season with salt and pepper to taste.
