Roasted Sweet Potato Wedges [RECIPE]

Like so many of you, we are busy people. So we are always looking for ways to get dinner on the table quickly, without relying on takeout or frozen dinners. One way we do this is by making full use of our range. While we may be searing pork chops or fish on the stove top, we like to make the oven work just as hard as the burners so everything finishes up right on time. Our roasted sweet potato wedges are easy to prepare and cook in under 30 minutes to help you feed your family in a hurry. Best of all, they are super delicious!
PREP: 5 minutes
COOK: 25 minutes
INGREDIENTS
- 2 large sweet potatoes, peeled
- 2 tablespoons extra-virgin olive oil
- 1 tablespoon light brown sugar
- 1/2 teaspoon kosher salt, plus extra for sprinkling
- 1/2 teaspoon freshly ground black pepper
DIRECTIONS
- Preheat oven to 450 degrees F.
- After peeling the potatoes, cut in half lengthwise, then cut each half again crosswise. Finally, cut each piece into three wedges and transfer to a foil-lined baking sheet and drizzle lightly with oil.
- In a small bowl, combine brown sugar, salt, and pepper. Sprinkle over potatoes and toss to coat. This mixture will help caramelize your potatoes, giving them the perfect blend of salty and sweet.
- Bake potatoes for 15 minutes, then turn. Cook for another 10 minutes until they are lightly browned; sprinkle with a pinch more salt and serve. If you have some dark charred parts on the potatoes, don’t worry. Those pieces are extra flavorful because that’s where the caramelization happened!
TIP: This is one thing on your plate you don’t have to worry about sneaking to the family dog. Our schnauzer goes crazy for sweet potatoes, and a couple wedges in his food bowl make him one happy camper. We bet your dog will love this treat too!
