Cole Slaw [RECIPE]

Cole slaw is a Southern staple. It goes great with everything from fried chicken to barbecue, is rich in vitamins C and K, and adds about 25 grams of fiber to your diet per serving. Mostly, however, I dish it up to my guests because it’s a simple way to add something green to the menu and it tastes delicious!
PREP: 20 minutes
INGREDIENTS
- 6 cups shredded cabbage (I use both red and green cabbages for great color.)
- 1 cup shredded carrot
- 1 cup mayonnaise
- 1/4 cup white wine vinegar
- 1 teaspoon celery seed
- 1/4 cup granulated sugar
- Kosher salt and freshly ground black pepper
DIRECTIONS
- In a large bowl, combine cabbage and carrots. In a smaller bowl, whisk together the mayonnaise, vinegar, celery seed, sugar, and salt and pepper until smooth. Pour over slaw and toss to coat evenly. Cover and refrigerate until ready to serve.
TIP: If you don’t have time to shred a head of cabbage and carrots, buy a 14 to 16-ounce bag of pre-shredded slaw at the grocery store and make the dressing as directed. Pour over, toss, and chill until you’re ready to serve.
