Chewy Chocolate Cookies with Peanut Butter Chips [RECIPE]

Who doesn’t love pairing chocolate and peanut butter? Whether you’re a fan of Reese’s famous candies or not, you’d be hard pressed to find a cookie as decadent and delicious as this one. And if you want something extra special, dollop up a scoop of vanilla ice cream between two of these cookies and wrap in wax paper, then freeze for an hour to create homemade ice cream sandwiches that will set your heart aflutter.
PREP: 20 minutes
BAKE: 9 minutes per sheet
INGREDIENTS
- 2 cups all-purpose flour
- 3/4 cup cocoa powder
- 1 teaspoon baking soda
- 1/2 teaspoon Kosher salt
- 1 1/4 cups unsalted butter, softened
- 1 1/4 cups granulated sugar
- 2 eggs
- 2 teaspoons vanilla extract
- 1 2/3 cups peanut butter chips
DIRECTIONS
- Heat oven to 350°F. Stir together flour, cocoa, baking soda and salt; set aside.
- Beat butter and sugar in large bowl with mixer until fluffy. Add eggs and vanilla; beat well. Gradually add flour mixture, beating well. Stir in peanut butter chips. Drop by rounded teaspoons onto ungreased cookie sheet.
- Bake 8 to 9 minutes. (Do not overbake; cookies will be soft. They will puff while baking and flatten while cooling.) Cool slightly; remove from cookie sheet to wire rack. Cool completely.
YIELD: About 54 cookies
