Green Chile-Tomatillo Sauce

We love tomatillos and we are always looking for new ways to prepare them. Their unique citrus-tinged flavor is the perfect match for Mexican food. If you already like our yummy Salsa Verde, then we guarantee you’re going to love this Green-Chile Tomatillo Sauce with its cream base, spicy chiles and a twist of lime. Serve it over nachos for a unique twist, replace red sauce with it on enchiladas, or use it in our Blue Corn Chilaquiles with Chicken. Any way you eat it, it’s delicious!

PREP TIME: 20 minutes
COOK TIME: 1 hour and 4 minutes

INGREDIENTS

  • 2 Tablespoons vegetable oil
  • 1 cup finely chopped white onion
  • 4 cloves garlic, minced
  • 8 large fresh tomatillos, husked, rinsed, and quartered
  • 5 Anaheim chiles, roasted and chopped
  • 1 cup thinly sliced green onions
  • 1 cup chicken broth
  • 3/4 cup heavy cream
  • 1 teaspoon Kosher salt, or to taste
  • Fresh lime juice, to taste

DIRECTIONS

  1. Heat oil in a medium saucepan over medium-high heat and sauté onion for 2 minutes. Add garlic and cook for 2 minutes more, stirring occasionally.
  2. Place tomatillos in a food processor and pulse until tomatillos are finely chopped. Add tomatillos, chiles, green onion, chicken broth and cream to saucepan and stir. Bring mixture to a boil. Lower heat so sauce is barely simmering. Cook for 1 hour. Season to taste with salt and lime juice.

YIELDS: 2 quarts
