Growing up, both our mothers made stuffed peppers for dinner because it was an inexpensive and wholesome meal that stretched a few ingredients to feed our families. However, I prefer this grown-up version because it incorporates sweet red peppers, flavored chicken sausage instead of beef, and Near East’s toasted pine nut couscous mix which adds a bit of spice to the filling. This recipe is pretty forgiving though, so feel free to substitute whatever ground meat you may have on hand. You can also use rice like our moms did if couscous isn’t available.  Continue reading “Stuffed Peppers [RECIPE]”

Here’s my take on this comfort food staple, with just a dash of Texas heat thrown in for good measure. I hope you love it! Continue reading “Chicken Spaghetti [RECIPE]”

Frito Pie [RECIPE]

Frito Pie
It doesn’t have to be game day to serve up a yummy family favorite like Frito Pie.

As a kid, Frito Pie was always one of my favorite school lunches. It was crunchy, cheesy and simply good, filling grub. But one of the things I didn’t like about it is that sometimes it was a little too oily, which wasn’t a good thing for a teenager worried about his complexion. Now I’ve replaced half the meat with ground turkey, added more seasoning for a deeper flavor profile, and even thrown in a bit of corn meal for extra creaminess. I hope you like this grown-up version as much as I do! Continue reading “Frito Pie [RECIPE]”
