One of our all-time favorite comfort foods is peanut butter. And who doesn’t love cookies? Marry the two, and you come up with a scrumptious treat that never stays in the jar for long! Your family will devour these before you know it, so you may need to double the recipe. We can’t lay claim to this yummy version though. Our maid of honor and one of our dearest friends shared this with us. But they are simply too good to keep to ourselves!

PREP: 10 minutes
BAKE: 10 – 12 minutes

INGREDIENTS

  • 1/2 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1/2 cup shortening
  • 1/2 cup crunchy peanut butter
  • 1 egg
  • 1 1/4 cups all-purpose or whole wheat flour
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

DIRECTIONS

  1. Heat oven to 375°F.
  2. Mix sugars, shortening, peanut butter and egg. Stir in flour, baking soda, baking powder and salt. Using an ice cream scoop, shape dough into 1 1/4 inch balls.
  3. Place about 3 inches apart on ungreased cookie sheet. Flatten in crisscross pattern with fork dipped in flour or sugar.
  4. Bake 10-12 minutes.

TIP: If using self-rising flour, omit baking soda, baking powder and salt.

YIELDS: About 3 dozen.
