Did you make up a huge batch of mashed potatoes to go with your favorite fall feast? If you find that you’re left with extras afterward, don’t toss them out! Save them and use them to make these potato pancakes for breakfast instead. They’re so delicious you may find yourself intentionally making heaps of potatoes in the future, just so you’ll have enough leftovers to fry these up again. When I lived in New York City in the early 90s, I got an awful case of the flu that just wouldn’t go away. My friend Veeda brought me barley soup to help me get better, and I loved how hearty and delicious it was! But you don’t have to be sick to crave this soup. In fact, now that temperatures are dropping, this is the perfect season to make it! In this version, I kicked the recipe up a notch by adding Italian meatballs and fresh kale. In my opinion, autumn is the perfect time of year to bake because two of my favorite things are in season: apples and cranberries! While Heather is the primary baker in our house, there are a few things I do like to prepare when she’s not using the oven. In this case, I love this hybrid recipe which takes advantage of ripe seasonal fruit and tops it with yummy batter that rises too thick to be called a traditional cobbler. But it is oh so good.
