When we travel, we love discovering new vineyards, languishing in their tasting rooms, and sampling new wines. We’ve sipped traditional reds and whites in California, muscadine wines in Texas, and ice wines in Canada. But it wasn’t until we went to New Mexico that we tried pistachio wine! Until that point, we had no idea our favorite adult beverage could be made with anything other than grapes. But it was spectacular, and we couldn’t get enough of it. Blueberry Mojito

Blueberry Mojito

Delicious and refreshing, our blueberry mojito is the perfect summer drink.

Although we don’t always serve alcohol when we entertain, sometimes we do crave an adult beverage. At the peak of summer, during berry season, there is little more refreshing than this ice-cold blend of macerated fruit, mint and rum. This drink is perfect served with freshly grilled seafood or alongside a sizzling platter of fajitas.

PREP

10 minutes

INGREDIENTS
  • 1/2 cup blueberries
  • 2 tablespoons blueberries
  • 1 1/2 tablespoons confectioners’ sugar
  • 2 lime wedges
  • 4 mint leaves plus more for garnish
  • Club soda or seltzer water
  • 1/2 cup crushed ice
  • 3 tablespoons white rum
DIRECTIONS
  1. In a cocktail shaker, lightly muddle 1/2 cup blueberries with the sugar, lime wedges, mint and a splash of club soda. Add the ice and rum and shake.
  2. Spoon the remaining 2 tablespoons of blueberries into a tall glass and pour in the mojito. Top with a small splash of club soda and garnish with extra mint leaves if desired.
