Although you can purchase ready made enchilada sauce at the grocer’s, it is helpful to know how to make it yourself for those times you can’t get to the store. It is easy to prepare, tastes great, stores in the fridge for up to a week and even freezes well. It also isn’t only for enchiladas. I use it when making other recipes too when I’m looking for a tomato sauce with a bit of zip, like with my beef and bean burritos. Is it possible to serve Mexican food without a big pot of refried beans (aka frijoles)? Well, I guess it’s possible, but not recommended! Not only are they delicious, but they’re nutritious and a great source of fiber too. Plus, they just mix well with a side of Mexican Rice and the left overs are perfect stuffed inside a great big burrito. Having traveled about the United States as much as we have, we tend to pick up culinary traditions all around the country. Maque Choux is a traditional side dish served throughout Louisiana. We first learned about it when we took a class at the New Orleans School of Cooking a few years back, although that recipe called for tomatoes. I’ve cut them out here, however, which is why I’m calling this version Fou Maque Choux (fou is Cajun for “crazy”). In its place I’ve  added a touch of Tex-Mex flavor by adding the black beans and Mexican oregano. The ingredients blend together beautifully and make for one yummy new riff on a Cajun classic. Enjoy!
