Life in New England is filled with festivals for everything from seafood to cranberries. In Maine, there are a number of great festivals that celebrate blueberries, and rightfully so. These little berries are delicious whether they are fresh or baked into something decadent, like this oven-baked pancake which is guaranteed to please your guests at your next Sunday brunch. If you like, you can add other berries too for color and taste or try cutting cream cheese into tiny cubes and stirring it into the batter for extra richness.  Read more of this post

Blueberry Mojito

Blueberry Mojito

Delicious and refreshing, our blueberry mojito is the perfect summer drink.

Although we don’t always serve alcohol when we entertain, sometimes we do crave an adult beverage. At the peak of summer, during berry season, there is little more refreshing than this ice-cold blend of macerated fruit, mint and rum. This drink is perfect served with freshly grilled seafood or alongside a sizzling platter of fajitas.

PREP

10 minutes

INGREDIENTS
  • 1/2 cup blueberries
  • 2 tablespoons blueberries
  • 1 1/2 tablespoons confectioners’ sugar
  • 2 lime wedges
  • 4 mint leaves plus more for garnish
  • Club soda or seltzer water
  • 1/2 cup crushed ice
  • 3 tablespoons white rum
DIRECTIONS
  1. In a cocktail shaker, lightly muddle 1/2 cup blueberries with the sugar, lime wedges, mint and a splash of club soda. Add the ice and rum and shake.
  2. Spoon the remaining 2 tablespoons of blueberries into a tall glass and pour in the mojito. Top with a small splash of club soda and garnish with extra mint leaves if desired.
